A Long-Awaited Return: Derek Gamlin and Henry Arciniega soon to Open Gamlin’s in Maplewood

MAPLEWOOD, MO — After five years of searching for the right moment and the right place, St. Louis restaurateur Derek Gamlin is returning to the local dining scene with a new restaurant concept, Gamlin’s, set to open in early 2026 in Maplewood.

Gamlin’s is a partnership between Derek Gamlin — founder of Sub Zero Vodka Bar, Gamlin Whiskey House and 1764 Public House — and Henry Arciniega, former partner of the beloved West End Grill and Pub. Together, the longtime friends and hospitality veterans are building what they describe as not just a restaurant, but an experience designed to feel like home.

“For five years, we’ve waited,” said Derek Gamlin, co-owner of Gamlin’s. “Not because we weren’t ready, but because we were committed to doing this the right way. Gamlin’s represents everything we’ve learned, everything we loved about our past restaurants and everything we believe St. Louis has been missing.”

A Return Years in the Making

The closures of Sub Zero Vodka Bar, Gamlin Whiskey House and 1764 Public House in 2019 and 2020 left a noticeable void in the St. Louis restaurant community. Since then, countless local establishments have closed, leaving diners nostalgic for places built on relationships, quality food and genuine hospitality.

“What made our previous restaurants special wasn’t just the menu or the bar program,” said Henry Arciniega, co-owner of Gamlin’s. “It was the people. The regulars. The staff. The feeling that you belonged there. Gamlin’s is our chance to bring that back — and to do it better than ever.”

Why Maplewood

Maplewood quickly emerged as the perfect home for the new concept, thanks in part to longtime friend Pete Rothschild, whose relationship with Gamlin and Arciniega helped bring the opportunity forward.

“Pete personally missed those Central West End restaurants,” Gamlin said. “He believed in this project from the beginning and wanted to play a key role in helping us bring it back in a new way. Maplewood welcomed us with open arms.”

City leaders are equally enthusiastic. The City of Maplewood has embraced the project which will be located at 2704 Sutton, with early conversations even influencing menu development.

“The mayor jokingly made a personal request for vegetarian menu options and non-alcoholic drinks,” Arciniega added. “We were happy to let him know those were already part of the plan!”

The Gamlin’s Experience

Gamlin’s will be a refined evolution of the partners’ previous concepts — highlighting the best of what guests loved, with a modern approach. The menu will focus on high-quality steaks, fresh pasta, seafood, locally sourced provisions and vegetarian-friendly dishes. Select desserts and confections from Amy’s Cake Pop Shop, owned by Derek Gamlin’s wife, Amy Gamlin, will also be featured as part of the menu.

The bar program will showcase an experiential cocktail menu, including a tableside blend-your-own whiskey experience, designed to be interactive, personalized and memorable.

“Our goal is to create the best restaurant experience in St. Louis,” Gamlin said. “Not just the best meal — but the place you come back to again and again.”

Design Rooted in Legacy

Interior and brand design for Gamlin’s is currently underway in collaboration with Elizabeth Arway of Creative Entourage, the award-winning creative firm behind the branding of Gamlin’s previous restaurants.

“She brings proven experience in building strong brands and a clear understanding of our vision,” Gamlin said. “Her creativity and strategic thinking play a key role in shaping the new Gamlin’s brand.”
